Scones Recipe
(From an old recipe book.)
Ingredients:
• 500ml Cake flour.
• 50ml Baking powder.
• 2.5ml Salt.
• 25-50ml Butter. (More butter will make the scones crispier.)
• 187-200ml milk.
• 250ml Cream.
• Jar of strawberry jam.
Method:
• Grease a baking tray and pre-heat oven to 250°C/500°F.
• Sift dry ingredients together.
• Cut butter into small cubes and rub it into the dry ingredients with your fingers or with a pastry
cutter/fork. Keep mixing until it looks crumbly.
• Add milk and cut into the dry ingredients with a metal spoon/spatula until just mixed. (Remember, you need to handle the dough as little as possible to help the scones be as flaky as possible.)
• Empty onto a floured surface and gently pat out with your hands to 2cm thick.
• Cut with a cookie cutter or cup/glass.
• Place onto your greased baking tray and bake for 10-12min or until golden brown on top.
• Place onto a cooling rack and allow to cool completely.
• Whip your cream and place in fridge until time to serve.
Brew a cup of your favourite tea. Slice a scone in half and put a teaspoon of strawberry jam onto each half, followed by a teaspoon of whipped cream (unless you prefer your scones the other way – cream then jam). Enjoy!
