To me, samoosas seem like the Indian cuisine version of onigiri (sort of – they’re both triangular food
items), which I felt matched this series well. ^-^
Recipe Ratings:
• Health: 2/5. (The ingredients aren’t bad, but… fried foods aren’t very healthy for us.)
• Ease: Fair.
• Speed: Takes a while. (Though… once you get used to the folding it may go quicker.)
(Ingredients)
• Potato – 1 large one.
• Flour – 2 cups.
• Salt – ½ tsp.
• Oil – 60ml. (I used coconut oil.)
• Water – ¼ cup.
• Spices:
- ½ tsp each of: cumin powder, coriander powder, garlic salt and salt.
- 1/3 tsp paprika.
- ¼ tsp cayenne.
- ¼ tsp turmeric.
- ¾ tsp chilli flakes.
(Note: use less spices if you’re worried about it being too spicy. Taste the coated potato mixture and add if need be. You can always add, you can’t take out.)
(Method)
• Peel and cut potato into cubes. Boil for 20 minutes or until soft.
• Combine flour and salt then add oil. Mix with fingers until it resembles bread crumbs.
• Slowly add water, mixing as you do until a firm dough forms. Set aside for 30min under a damp cloth.
• Once potato is cooked. In a frying pan, pour a little oil and add the spices. Cook the spices a little before adding the strained and cooked potato and mix to coat with the potato cubes. Mash the cubes if they don’t break down while mixing with the spices.
• Divide the dough into 8 equal portions, rolling each into a ball before placing back under the damp cloth.
• Roll a ball out into roughly a 15cm long oblong shape and cut down the middle length ways so you end up with two strips. Take one strip, wetting the folding edge with a little water, form a cone shape with half the strip – pinching to close the ‘tip’ of the cone. Fill with a teaspoon of the potato mixture. Wet the free edge of the strip and then fold over the base of the filled cone. Pinching/pressing to close and form the triangular shape. (This takes practice and I still didn’t get it right by the end. Feel free to look up videos online to find how other people fold/make their samoosas. It’s really hard to explain the folding process I was trying to follow… An alternative would just be to form a cone with the dough piece and, once you’ve filled it, crimp the base shut. You may want to change the size and rolled out shape of the balls you create for this version though. [I highly recommend looking up a video or two on samoosa folding if this is your first time making these spicy little treats…])
• In a deep pot, pour in enough oil so that it’ll cover the samoosas when you put them in and bring up to heat. Once oil is ready, place a couple of samoosas (4 at a time if your pot is big enough) in and cook for 5 minutes or until golden brown.
