Fan Side Menu – Haikyuu



Simple, but effective. Karasuno and Nekoma cupcakes. Ideal for any Haikyuu get together. Serve ‘family style’ on a tray like this or make specific ones for your guests of their favourite characters and place them into individual snack boxes along with any other treats you’re serving. ^-^

Making these was interesting. Both were flavours I hadn’t done before – Karasuno was (meant to be) orange; inspired by their season 4 alternative uniforms, because, to me, they look like a bag of mikan. XD Nekoma was ‘apple pie’; inspired by Kenma’s favourite food.

I tried to use orange juice to give the Karasuno cakes an orange flavour; don’t do that. It didn’t taste like orange at all ~ I recommend using orange flavouring/essence (which I’ve included in the recipe below).

The ‘apple pie’ version worked much better. ^-^


Another interesting aspect of this project was actually how the characters sort of decided who’d be which cupcake as I was icing them… The only exceptions were the liberos as I tried to find the cake that ‘said’ Noya or Yaku to me… Tanaka and Lev gave me the most uphill in icing them; there was a lot of fiddling to get their icing to be just right. Surprisingly, Kageyama attempted to make a ‘run’ for it (which resulted in shmooshed icing all over my fingers… Thanks Kageyama…). Daichi was also a little ‘antsy’ during the process, but was less of a hassle than Kageyama. When I came to Kuroo and Kenma – the last two of the Nekoma cupcakes, I was having a hard time deciding which one would be who. Then Kuroo fixed that by being the ‘scruffier’ of the two cakes and Kenma’s cake helped to seal the deal by have a fair line of cinnamon syrup showing all around the cupcake from the apple filling, which kind of reminded me of his hair. ^-^

The below recipes are for the pictured cupcakes. However, feel free to develop your own take on these. If you plan on doing any other teams, I recommend drawing up your icing designs in rough on a piece of paper to help you out when it comes to figuring out colours and quantities.

Karasuno Orange Cupcakes

(Makes 7-8 cupcakes.)


Ingredients

• 55gr Margarine/Butter.

• 70gr Sugar.

• Pinch Salt.

• 115gr Flour.

• 1 Egg.

• 1 tsp. Baking Powder.

• 45ml Milk.

• 1 tsp. Orange Essence/Flavouring.

• Orange Gel Food Colouring.


Method

• Preheat oven to 220°C.

• Cream marge/butter and sugar very well.

• Beat in egg – beat well.

• Add orange essence.

• Sift dry ingredients into mix; alternate with milk to make a soft ‘dropping’ consistency.

• Add desired amount of orange food colouring.

• ½ fill muffin tin cups/ cupcake liners.

• Bake at 220°C for 10-15 min or until ‘golden brown’.


Nekoma Apple Cupcakes

(Makes 7-8 cupcakes.)


Ingredients

• 1 Medium-Large Apple – peeled and diced.

• 2 TBSP Butter.

• 1 tsp. Vanilla Essence.

• 1 tsp. Cinnamon Powder.

• 1 TBSP Brown Sugar.

• Splash of Water.

• 55gr Margarine/Butter.

• 70gr Sugar.

• Pinch Salt.

• 115gr Flour.

• 1 Egg.

• 1 tsp. Baking Powder.

• 45ml Milk.

• 1 tsp. Vanilla Essence.

• Red Gel Food Colouring.


Method

• Place diced apple and butter into a pan and stir until butter melts.

• Add vanilla, cinnamon powder and brown sugar. Stir to combine.

• Add a splash of water and cook until apple is cooked, but still has texture.

• Set aside. (You may need to reheat it before spooning into cupcake batter as the syrup may have

hardened.)

• Preheat oven to 220°C.

• Cream marge/butter and sugar very well.

• Beat in egg – beat well.

• Add vanilla essence.

• Sift dry ingredients into mix; alternate with milk to make a soft ‘dropping’ consistency.

• Add desired amount of red food colouring.

• Place a scoop of batter into the muffin tin cups or cupcake liners. Then (after reheating, if need be) place a tsp. of apple mixture into the centre of the batter. Now, add batter until it fills the cup/liner until half way.

• Bake at 220°C for 10-15 min or until ‘golden brown’.


Icing Ingredients

• 125gr Margarine/Butter.

• 500gr Icing sugar.

• Water.

• Food colourings. (Red, black and orange.)

• Cocoa powder.


Method

• Beat marge/butter until ‘softened’.

• Add icing sugar and beat.

• Gradually add water (a couple of tsps. at a time at max) and beat between additions until icing becomes your preferred consistency.

• Divide into 4 containers. To one add the red food colouring, to another add the orange and to the last add the black food colouring and cocoa powder; mix. Leave the 4th container white.

• To ice the cupcakes, I used a butter knife to apply the base colours and then two piping bags (ahem,

sandwich packets with a tiny hole cut in the corner) for the orange and black details. The numbers were done with a piping syringe and a star nozzle.
